What can you say about fillet steak. It's the most tender steak you can possibly get which is why it costs the most. Why is it tender? It's because it does absolutely no work for the cow. It sits in the loin area and does nothing! It does not have as much flavour as other cuts but it's always top of the pile when you're talking about luxury. Of course, these fillet steaks pack as much flavour as possible because they are dry hung instead of supermarket wet aging. Personally, I love to cook fillet steak in a massive beef wellington. When you cook one of those perfectly, it almost brings a tear to my eye.
