Pork & leek is a popular combination and a good seller. The leeks are cooked in butter and left overnight for the flavours to intensify before being mixed in with the classic pork sausagemeat. It's a good seller for a good reason. Trevor taught me how to link this variety and I cooked them in toad-in-the-hole the next day!
