My Italian sausage recipe using a delicious blend of spices (marjoram, sage, fennel, garlic & others) to make a truly tasty sausage. This sausage is for people who want a really really meaty sausage with a satisfying coarse texture. You know when you eat it that this can only be high quality meat.
Made from Tim's own pigs using pork shoulder, the prime cut for sausages and my recipe, together we've made a really outstanding sauage! :-)

We've made them extra large too so 4 sausages weighs in at a pound weight!
